
I made the enchiladas from the book and these quesadillas from the website.
I had every intention of taking step by step photos but got so swept up in the cooking I totally forgot.
That is not totally true. I took one photo of a bubbling pot of red sauce. I am sure we will see that random photo in the camera a few months from now and be totally perplexed!
Anwhoo the dinner was totally delicious! I have only made enchiladas with chicken before but hubs loved them with the ground beef.
I did the grocery shopping on my own this week due to hubs having a show. I love grocery shopping. I make a menu for the week (which I rarely follow) and then plan out what I need. I make a detailed list broken into categories such as grocery, produce, dairy, household ( hey I am a lawyer and I like lists and structure)! I also browse around the produce section for seasonal treats and the aisles for new products.
Here is a couple of items I picked up this week. What do you think I am making?
That's right! Potato and Leek pizza from the Pioneer Woman book. I am a bit nervous as I have no experience with dough. I have never made bread or pastry. I will let you know how it goes.
So here is the mystery. I also purchased this.
Bocconcini. I have never purchased bocconcini before (pathetic I know). I love bocconcini and have eaten it many times when eating out. I have never cooked with it myself.
Was it an impulse buy? No. Here is the mystery. It was on my list. Clear as day in the dairy column. I wrote it, and yet I have no idea why. I must have had a recipe in mind when I wrote it on the list. Yet now I have no recollection at all of the recipe or why I wrote bocconcini on the list. Wow.
So I have this bocconcini! Any ideas what I should make with it? I am open to suggestions!
When got home from work tonight hubs had already left for the theatre. There was a sweet suprise for me on the table. This!
I love my slow cooker. It is my favorite appliance. There is nothing better than coming home to a cooked dinner with the house all smelling-a -lovely.
Once you get past the title - Busy Woman's Slow Cooker Recipes - it is a great book. Do busy men use slow cookers? Not sure!
I can't wait to have a good look at it over the weekend.
